Red Beet Gazpacho
/serves 6-8 small portions
- 5 beetroots
- ½ red onion
- ½ red chilli
- 1 yellow pepper
- 1 clove garlic
- 1 avocado
- juice 1 lemon
- 200ml water
- ½ tbsp veg cubes
- 4 ice cubes
How
Peel & grate beets. Chop onion, chilli, pepper & garlic. Add avocado & all other ingredients into a blender add ice cubes. Blend to a smooth consistency. Garnish with chopped cucumber or asparagus spears, when in season
