Ingredients
- 8 tbsp mixed seeds (flax, pumpkin, sesame, sunflower)
- 3 handfuls goji berries
- 1 pitted dates
- 4 tbsp cacao powder
- 1 tsp desicated coconut
- 1 ground cinnamon
- 4 tbsp coconut oil
- 1 tbsp nuts (brazil, walnuts, pecan)
- 1 tbsp dried apricots or cranberries
Raw bliss bars are easy to make, packed with good nutrition, and are a great go-to snack
Method
- Place all ingredients except coconut oil nuts & dried fruit in food processor. Keep back 1 handful of seeds & goji berries.
- Pulse, creating a stiff mixture.
- Place coconut oil in heatproof bowl, sit the bowl in boiling water to melt the oil.
- Add melted oil to rest of ingredients. Process at full speed into firm paste.
- Line 30cm rectangular cake tin, line with parchment.
- Press mixture into tin. Sprinkle goji berries & seeds on top
- along with chopped fruit & nuts, lightly press.
- Refrigerate 3 hours to set.
